'Used barrels result in a taste profile less influenced by the wood’s natural vanilla, allowing the more delicate flavors of the rye distillate to prevail. The relatively low rye content and the unique aging process give this whiskey its soft, smooth flavor'.

Body: Young and virile and full of pride and passion. The Ileach is showing more maturity and early signs of becoming a warrior on this Island of peat giants and Celtic crosses. The texture of the spirit has been enriched by another year’s maturation thus becoming less aggressive by taking the strength of ancient oak which in turn gives more character and personality.

Nose: If you have never been to Islay then close your eyes and gently inhale the spirit, the aromas of peat bogs, smoke, mint, mountain thyme, yellow gorse, wet moss, pine, rowan & birch which provide a distilled essence that intermingles with the south westerly sea winds carrying their traces of  distant lands. The aromatics of brine and sea spray with the underlying power of Atlantic swells ever present as it is for the Ileach and it’s smell of home, warm friendly communities and people who care.

Palate: The peaty flavour is rich and vibrant reaching deep onto the palate accompanied by dark warm molasses with hints of dates and bitter chocolate. The second layer brings the moor land mossy flavours bringing complexity and contrast weaving beautifully with the smoke, and then the marine breezes add their unique freshness, lifting the senses on an updraft of the Queen of the Hebrides. The history and culture of an Islay in the palm of your hand. It arouses feelings of family and friends who, like the distillery, have shown a life force that can overcome many hurdles and remain untouched by the ever changing seasons of life.

Wasmund's Single Malt Whisky (Batch 39)

Distilled by Copper Fox in Virginia, Wasmund’s Single Malt is made out of 100% locally sourced barley.  It combines the best of the grand tradition with creative and unique innovations using apple and cherry wood smoke to dry the floor malted barley.

The single batch copper pot-still produces one barrel at a time and the spirit is non-chill filtered to preserve the complete flavour and essence of the barley grain. Reduced to 62% abv by the addition of their own calcium rich well water.  The whiskey is then matured twice in used bourbon barrels.  The first barrel has a trap door through which an infusion of apple wood chips and oak is effected for 18 months.  The whisky is then left in the second barrel for 24 months. 

The Wasmund’s Single Malt discerns notes of calvados brandy and a sweet nuttiness.
