Port Ellen 31 Y.O. 2010 10th Release

The 2010 beautifully presented rare official Port Ellen release. 

Official tasting notes:

Appearance: Amber. Good beading for its age.

Nose: Pleasingly fresh, with a mild prickle that dances round the nose, suggesting a youthful sparkle. Immediate wood smoke and majestic medicinal notes, then pine resin and faded pot-pourri (spice drawer). A salty breeze. Beneath this, a layer of comforting beeswax and honeyed fruit balanced by a buttery saltiness. Water liberates a wisp of smoky candle, classic antiseptic notes and cereals, yet the nose remains elusive and delicate.

Body: Full, viscous.

Palate: Gentle. Drinks well straight: sweetish and warming. Softly cooling at first, though, with a glorious interplay of spicy, syrupy ginger sweetness and a herbal bitterness. Soon, classic cleansing, medicinal flavours assert themselves, to stay. With water there’s a pleasing mouthfeel, the sweetish start balanced by more light herbal notes (tarragon). A taste from a bygone era.

Finish: Magnificent. Long and splendidly antiseptic, with sweet pine resins plus herbal and savoury notes (truffle). With water, soft dried fruit and vanilla notes flirt with lingering, scented coal-smoke, drifting over all.

Limited to 3000 bottles worldwide this is a light and delicate Talisker - highly rated off the back of recent tastings.

Official Tasting Notes:

Appearance: Mid-amber. Medium beading, large beads.

Nose: Mild nose-feel. A delicate, complex and appetising old nose that slowly reveals a balance of buttery softness and acetic sharpness. (Rather like the aroma of a Hollandaise sauce). Develops gently, vanilla alternating with sharper, faintly coastal notes. With time, in true Brora style, there’s a pleasing waxiness, and hints of old lavender, as in a dried-out pot-pourri. Water enhances these fragrant notes, and adds the scent of crisply laundered fine linen, while the waxiness becomes heavier (polished church pews). Later, there are traces of roast meat, and that appealing herbal fragrance persists.

Body: Dense. Oily and smooth.

Taste: At first smooth, sweet and honeyed, then a split-second later drying, with instant smoke and medicinal notes. More savoury notes rise with (a little) water. There’s a lightly teeth-coating waxiness. Sweet overall, but with slight saltiness and an intriguing herbal flavour.

Finish: Long and scented. At first, elegant with long malty notes: rich fruitiness with a charred, smoky backdrop. Then drying, with smouldering oak. Finally, salty-sweet.

Wasmund's Single Malt Whisky (Batch 39)

Distilled by Copper Fox in Virginia, Wasmund’s Single Malt is made out of 100% locally sourced barley.  It combines the best of the grand tradition with creative and unique innovations using apple and cherry wood smoke to dry the floor malted barley.

The single batch copper pot-still produces one barrel at a time and the spirit is non-chill filtered to preserve the complete flavour and essence of the barley grain. Reduced to 62% abv by the addition of their own calcium rich well water.  The whiskey is then matured twice in used bourbon barrels.  The first barrel has a trap door through which an infusion of apple wood chips and oak is effected for 18 months.  The whisky is then left in the second barrel for 24 months. 

The Wasmund’s Single Malt discerns notes of calvados brandy and a sweet nuttiness.
